Chef Kate Williams' long-awaited restaurant Republic will open Friday. The European-style tavern located in the Grand Army of the Republic building on Grand River prepared for the official debut with soft openings this week.

Look for dishes such as bone marrow fritters and beef tallow French fries.

Williams says she'll be using Old World techniques at Republic, and the culinary presentation will be hearty and rustic.

"Cooking by smoking, corning and all kinds of preservation methods that would be used before there was modern refrigeration," Williams told The Detroit News in December. "(Back then) it was very local, as in, you could only cook with what you had in your pasture."

Republic seats 92 and is located at 1942 Grand River in Detroit. Call (313) 446-8360 for reservations. The restaurant plans to start taking reservations through Open Table website and app starting Friday.
