Adding nuts and seeds to your fruit will give this snack more complexity and make it a bit more satisfying by adding healthy fats and more fiber. These salads in a jar are the perfect way to use up fresh farmers’ market produce. It can feel overwhelming to have a lot of fruit on hand, because you will worry that it will spoil quickly and must be used up, but the lemon juice will help slow the oxidation process of freshly chopped fruit.

Other fun add-in ingredients include fresh herbs, like mint and basil, or spices and extracts like cinnamon and vanilla. When you serve these fruit salads you can simply dive in with a fork or pour them over top oatmeal or chia pudding.

Fruit Salad

in a Jar

1 small apple, chopped

1 medium tangerine, peeled and sliced

1 cup fresh pineapple, chopped

1/2 cup blueberries, organic

1 lemon, juiced, plus 2 slices for garnish

2 tablespoons walnuts

Divide the chopped apple between two half-pint mason jars, followed by the tangerine, pineapple, and blueberries.

Pour the lemon juice over the fruit salad. Add the walnuts on top, and garnish with the lemon slice.

Eat right away, or seal and keep in the fridge for later. This fruit salad can be prepared up to a day ahead of time. Makes 2 half-pint jars.
