Take care not to overcrowd the pan, especially when it comes to cooking vegetables. A crowded pan doesn’t allow the vegetables to take on as much heat as they could. The result is the vegetables become steamed, rather than roasted, resulting in lackluster veggies that lack a snap. Give the vegetables some room.

One good cocktail

From the Cuban rum bar Cienfeugos comes a spirited collection of 100 recipes celebrating Cuba’s drinking history and culture. “Cuban Cocktail” (Sterling Epicure) focuses on some of the familiar favorites such as the Cuba Libra, mojito and daquiri, and adds some not-so-well-known items. Traditonally, a “shake” consists of a dark spirit, plus lime and sugar. This signature “Cienfuegos Shake” includes the richness of Benedictine liquor.

Cienfeugos Shake

6 mint leaves

3/4 ounce simple syrup

2 ounces El Dorado 15-year-old rum

1/2 ounce Benedictine

1 ounce lime juice

3 dashes Angostura bitters

In a shaker tin, muddle mint with simple syrup. Add remaining ingredients to the tin, shake with ice and double strain into a chilled glass.
